Loaded Potato Quiche
Ingredients
1 homemade or store bought pie/quiche crust
1 1/2 cups cooked ham, chopped
1 1/2 cups diced hash browns, thawed
1 1/2 cups shredded sharp cheddar cheese
3 medium green onion, sliced (3 tbsp.)
5-6 eggs
3/4 cup half-and-half
2 gloves garlic, minced
Salt & Pepper, to taste
3 slices bacon, crisply cooked, crumbled
Sour cream, if desired
Additional green onions, if desired
Directions
1. Preheat oven to 350.
2. Sprinkle ham, potatoes, cheese and 3 tablespoons onions in crust. In medium bowl, beat eggs, half-and-half, garlic, salt and pepper until blended. Pour over ingredients in crust.
3. Bake 1 hour 5 minutes or until knife inserted in center comes out clean. Let stand 15 minutes before serving. Top with bacon, sour cream and additional onions. Enjoy!
